Around lunchtime, we decided to make a stop in Abilene a town neither of us had visited before. We discovered a charming city with a rich history, vibrant community, and delicious food.

Our Personal Connection
As we drove through Abilene, it was getting to be lunchtime, and we decided to explore the town and find something to eat. We came across a neat area with several small restaurants and chose to try the Cork & Pig Tavern. It was Sunday, and they were offering a special brunch menu, but we opted for items from their regular menu instead.
Jtim ordered a Cuban sandwich, which he declared one of the best he’d ever had. The torta bread was croissant-like, making the sandwich especially delicious. I can confirm that it was indeed fantastic. I opted for their fish tacos, accompanied by peanut slaw. The slaw was unlike any I had tasted before, with a unique and amazing flavor that I highly recommend.
After our satisfying lunch, we continued our journey south, with Abilene leaving a positive impression on us. Although our trip was coming to a close, this stop added a delightful chapter to our adventure.
